How to manifest the Sobrarbe landscape through its unique tastes.

One of the definitions of dissection is the minute examination or analysis of something. During their talk the chefs will home in on the River Cinca and their plantations, with the produce of the planters' association ‘Un paso atrás’, and also on the forest that may be glimpsed from diners' tables at the Callizo restaurant.

The talk will help them sketch this corner of the Pyrenees through their cookery at Callizo.
