Local produce is the basis of the cookery of this Swiss chef, who concentrates on natural fare at one with the surroundings.
Her philosophy is to process foodstuffs in such a way that they retain their natural flavour, for diners to home in on the harmony between the aroma, texture and sound of each of them. She likes to put the entire food cycle on the plate because she believes that if we respect and venerate how our food is made and where it comes from, we afford better protection for our habitat.
